Vitamin C and stability
Vitamin C is very prone to damage by heat, oxygen, and storage over time. The relative instability of vitamin C in foods presents a compelling argument in favor of fresh food dietary approaches.While cooking will lower the amount of vitamin C in most foods, but the amount of vitamin C lost will vary widely by cooking method.
Vitamin C role in plants

Ascorbic acid is associated with chloroplasts and apparently plays a role in ameliorating the oxidative stress of photosynthesis. In addition, it has a number of other roles in cell division and protein modification.
