Classification of vitamin A
PROVITAMIN A : β -Carotene
VITAMIN A1 : Retinol ( Vitamin A alcohol)
VITAMIN A2 : 3 – Dehydro-retinol
VITAMIN A ALDEHYDE : Retinal
VITAMIN A ACID : Retinoic acid
VITAMIN A ESTER : Retinyl ester
Carotenoids, especially α– and β-carotene which are potential provitamin A precursors that can be converted into retinol, are present in plant products, especially green leafy vegetables, red palm oil and yellow and orange fruits. Carotenoids are biologically less available than retinol but they are generally more affordable than animal foods.
